Jamaican Coconut Cake


1 cup butter, softened
2 cups sugar
6 large eggs
2 cups flour, sifted
2 cups grated coconut
1 tbs vanilla

Preheat oven to 300 degrees. Cream butter and sugar until smooth. Add eggs one at a time. Beat well after each egg. Add flour and stir until well combined. Stir in coconut and vanilla. Pour batter into a prepared (greased & parchment paper) 10" round cake pan. Bake for 1 hour. Reduce heat to 200 degrees and bake additional 20 minutes. Cool completely
