Bourbon Recipes

Orange Bourbon Chicken

4 skinless, boneless chicken halves
¼ tsp salt
¼ tsp ground black pepper
¼ cup flour
3 tbs margarine
2 tbs brown sugar
2 tbs corn starch
1/8 tsp ground allspice
1 cup hot water
¼ cup orange juice
¼ cup bourbon whiskey
¼ cup chopped raisins
4 slices oranges

Sprinkle chicken with salt and pepper then dredge in flour. Brown in melted margarine over medium heat. Remove chicken and set aside.

Stir brown sugar, cornstarch, and allspice into skillet. Slowly stir in water . Reduce heat and simmer while stirring until thick (about 5 minutes). Stir in orange juice, bourbon, and raisins. Return chicken to skillet and top each breast with orange slice. Cover and simmer for about 30 minutes, or until chicken is done. Serve with sauce. Great over angel hair pasta.

Bourbon Chowder

4 tbs unsalted butter
1 small onion, diced
2, 14oz cans of creamed corn
¼ cup bourbon
¼ tsp. nutmeg
2 - 3 drops hot red pepper sauce
½ cup chicken broth
½ cup heavy cream
salt and pepper to taste
Melt butter over medium heat in large heavy pan. Sauté onions until soft. Stir in creamed corn. Heat bourbon in separate small sauce pan, carefully ignite and add to corn. Stir in remaining ingredients and serve immediately.
